Fried Chicken Chop doesn’t have to be an oily and greasy affair.
Ingredients
Chicken
2 pcs chicken breast
1 tsp salt
Sprinkle of freshly ground pepper
1 egg, lightly beaten
2 tbsp dry breadcrumbs
Fruit Salad
1 orange, diced
1 tomato, diced
1 ripe mango, diced
2-3 sprigs of mint leaves
1 bottle VITAGEN Orange
1 tbsp lime juice
1 tbsp olive oil
Sprinkle of salt and freshly ground pepper
Method
Combine cut fruits and chill it in the refrigerator.
Season the chicken with salt and pepper. Heat 5 tablespoons of oil in a non-stick pan.
Coat chicken in egg and then gently coat it again in breadcrumbs.
Pan-fry chicken in medium heat for 5 minutes on each side until cooked.
Before serving, add in VITAGEN, lime juice, olive oil and toss well with the chilled fruits. Add in mint leaves, a dash of salt and pepper to taste and serve it on the side with chicken.
