Chicken Chop in Fruity Sauce

Fried Chicken Chop doesn’t have to be an oily and greasy affair.

Ingredients
Chicken
  • 2 pcs chicken breast
  • 1 tsp salt
  • Sprinkle of freshly ground pepper
  • 1 egg, lightly beaten
  • 2 tbsp dry breadcrumbs
Fruit Salad
  • 1 orange, diced
  • 1 tomato, diced
  • 1 ripe mango, diced
  • 2-3 sprigs of mint leaves
  • 1 bottle VITAGEN Orange
  • 1 tbsp lime juice
  • 1 tbsp olive oil
  • Sprinkle of salt and freshly ground pepper
Method
  1. Combine cut fruits and chill it in the refrigerator.
  2. Season the chicken with salt and pepper. Heat 5 tablespoons of oil in a non-stick pan.
  3. Coat chicken in egg and then gently coat it again in breadcrumbs.
  4. Pan-fry chicken in medium heat for 5 minutes on each side until cooked.
  5. Before serving, add in VITAGEN, lime juice, olive oil and toss well with the chilled fruits. Add in mint leaves, a dash of salt and pepper to taste and serve it on the side with chicken.
